It's Monday and everyone knows what that means, it is time to decide what to pack all week long for lunches. My game plan this week is Boston Butt. A lady at my work was selling Boston Butt's for a fund raiser at her child's school. And you guessed it, I bought one. The Boston Butt was cooked, hot, and ready to go. The bf pulled it all apart and put in in several ziplock bags. Half went into the freezer and half we are eating on all week for lunches. It is delicious and super easy. Hey, you can't beat that!
Not to mention, that our monthly food budget is running low and we still have almost two weeks left in March. When the month is coming to an end and you are running low on money, what are some the things that you do to make it through?

Ok, what the heck is a Boston Butt?
I usually try to cook enough at dinner so that I am always eating leftovers for lunch each day.
Boston Butt is a cut of pork that comes from the upper part of the shoulder from the front leg and may contain the blade bone.[1] Smoked or barbecued Boston butt is found in the southern U.S.
All I know, is I am in hog heaven after eating it.

When my grocery budget starts looking slim and there is too much month left, I tend to start raiding my freezer and eating what I can from there. I did a good inventory of it this weekend, I have plenty of food in there to last me more than a month. It's time to start eating through some of it before it's been in there too long.
I'm so terrible at timing our grocery budget--we're almost *always* running low toward the end of the month. To get through, DH starts getting lots of tuna sandwiches in his lunch. They are healthy, inexpensive, and there are coupons for tuna almost always floating around somewhere. I also start adding a lot of beans, rice, and lentils to our dinners. Big bags of all of these are very cheap and very healthy.
